What is "Rincalzo"?

The aging of Traditional Balsamic Vinegar of Modena PDO does not take place in a single barrel, as happens with wine or Balsamic Vinegar of Modena PGI.

Aging occurs in “batteries”: a series of barrels arranged in decreasing sizes, from the largest to the smallest. The process is dynamic, because every year a transfer takes place.

Through this annual transfer, we compensate for the natural evaporation in the smallest barrel by topping it up with vinegar from the next larger one.
The largest barrel is then refilled with freshly cooked must from the new harvest.
This process continues for at least 12 years.
